Perfect Potato Wedges:
1. Soak your wedges in water for 10 - 30 minutes.
2. Lay on paper towels to dry, toss wedges in olive oil (i used a tbsp of bacon fat)
3. Spread wedges on a oiled pan. Put the pan in the oven, that has been preheated to 475 degrees. Bake for 10 - 15 minutes until the bottoms of the wedges are goldeny-brown, and then flip them all on the other side and bake for an additional 10 - 15 minutes. Toss a final time with some seasoned salt (I like Lawry’s) and some fresh cracked pepper. YUM.
